It's been ages since I did a recipe, so I decided to share with you the result of yesterday's baking with Chase. I love getting him involved in the kitchen, it's nice to think I'm teaching him life skills by having fun with him. All three kids have been involved heavily in the kitchen from being little. This was by no means an accident, I can't wait until I can tell them to knock us a nice three course meal up between them.

Chase decided he doesn't like white chocolate buttons anymore after Santa brought him a tube full of them - yes they were the real deal, he just didn't like them. Coupled with the fact I had some bananas that looked like they had been burnt- they were that black, I decided we would have some muffins.

As soon as I say I'm making anything Chase runs for a chair to stand on next to me and help. I gave him a fork and he mashed the bananas. He beat the egg for me and mixed it in with the sugar and bananas. He loved every minute of it and was ever so pleased with his creation.

I did totally make this up so forgive me if the quantities don't produce fluffy muffins like mine, practice makes perfect anyway.



250g plain flour

4 very ripe bananas

100g sugar

100g white chocolate buttons/chips

1 egg beaten

80g melted butter or coconut oil

1 tsp bicarbinate of soda

Half tsp baking powder

Tsp vanilla essence - leave out if none



Preheat oven to 180.

Sift flour, baking powder and bicarb together.

Mash the bananas and mix with egg, butter, sugar and essence.

Fold the flour into the banana mix and add the chocolate buttons.   

Pour into a greased 23cm loaf tin or alternatively 18 muffin cases.

Bake for 30-40 mins for a loaf and around 15-20 for muffins, until you insert a skewer and it comes out clean.
